Videogame Recipes: Mama Dolce's Sweet-And-Sour Stroganoff

CAUTION: THIS RECIPE WAS NOT TESTED YET AND MAY ACTUALLY TASTE LIKE FALLOUT'S FOOD.

Ingredients:

  • 2 1/2 pounds beef tenderloin, well trimmed, cut into 2x1x1/2 inch strips
  • 2 tablespoons vegetable/olive oil
  • 6 tablespoons butter/garlic butter
  • 1/4 cup shallots, finely chopped
  • 1 pound small button mushrooms, thinly sliced
  • 1/2 cup ketchup
  • 1 teaspoon soy sauce
  • 1/3 cup balsamic vinegar/white vinegar
  • 2 tablespoons cognac OR 3 tablespoons honey
  • 3/4 cup unsweetened pineapple juice
  • 2 tablespoons cornstarch/arrowroot
  • 3/4 cup crema/sour cream/creme fraiche
  • 1 tablespoon dijon mustard
  • 1 tablespoon fresh dill, chopped
  • 12 onces wide egg noodles
  • 1 tablespoon paprika

Instructions:

  1. In a saucepan, combine ketchup, soy sauce, vinegar and honey/cognac.
  2. Pat meat strips dry with paper towels. Sprinkle with salt and pepper.
  3. Heat oil in large skillet until very hot. Working in batches, add meat in single layer and cook just until brown on the outside, ~1 min per side. Transfer to rimmed baked sheet.
  4. Melt 2 tablespoons butter in same skillet over medium-high heat. Add chopped shallots and saute until tender, scraping up browned bits, ~2 mins.
  5. Add button mushrooms. Sprinkle with lemon pepper and saute until liquid evaporates, ~12 mins.
  6. In a cup or bowl, whisk the cold pineapple juice with arrowroot/cornstarch until smooth and combined, then whisk in ketchup mixture.
  7. Add whisked sweet-and-sour sauce into skillet, stir and simmer until sauce thickens and coats mushrooms, ~14 mins.
  8. Stir in crema/sour cream and mustard. Add meat and any accumulated juices on the baking sheet. Simmer over medium-low heat until meat is heated through but still medium-rare, ~2 mins.
  9. Stir in chopped dill. Season to taste with salt and pepper.
  10. Meanwhile, cook noodles in large pot of boiling salted water until tender, ~8 mins. Drain, transfer to bowl.
  11. Add remaining 4 tablespoons butter and toss to coat. Season with salt and pepper.
  12. Divide noodles amongst plates. Top with beef and sauce. Sprinkle generously with paprika.
