Videogame Recipes: Mirelurk Traders' Mirelurk Cakes
THIS RECIPE ASSUMES THE MIRELURK CAKES ARE BREADED, AND THAT MIRELURK EGGS ARE EQUIVALENT TO CHICKEN EGGS.
Ingredients:
- 16 ounces crab meat, drained
- 6 spring onions, finely sliced
- 2 fresh red chili, minced OR 1 tablespoon dried crushed chili
- 1 rosemary sprig, dried and crushed
- 4 tablespoons lime juice
- 4-6 eggs
- 8 teaspoons mayo
- 3 1/2 cups breadcrumbs OR rice cracker crumbs
- 1 teaspoon garlic salt OR 1/2 teaspoon salt
- Approx 1-1 1/2 cups oil, for frying
Instructions:
- Place crabmeat, onions, chili, lime juice, 2 eggs, rosemary, mayonaise, and 1 1/2 cups crumbs together, mix well until combined.
- Add up to 1/2 cup more breadcrumbs as needed, until mixture is moist enough to form cakes, but does not fall apart.
- Pat mixture into cakes, set aside on clean plate and chill.
- In separate bowl, break 2 large or 4 small eggs and briefly whisk.
- Pour 1 1/2 cups crumbs into a mixing bowl, add salt and stir to mix.
- Dip crab cakes first into the eggs, then roll in crumb mixture to coat and cover. Set on a clean surface.
- Pour oil into a frying pan or wok set over medium-high heat, 1 inch deep. Heat for 1 min or longer. Test heat by dropping a few crumbs in: if they sizzle immediately, oil is ready.
- Carefully place crab cakes in hot oil. Reduce heat slightly to prevent overheating and splattering. Fry crab cakes 1 to 2 mins per side, or until golden brown.
- Serve with a dollop of mayonaise.
